The Cellar Master of Maison Lanson has exercised his art in selecting his terroirs to produce this exceptional 2012 vintage Champagne, composed of wines from selected parcels of Grands Crus and Premiers Crus, 52% Pinot Noir at Verzenay, Aÿ, Bouzy, Mareuil sur Aÿ and Verzy, and 48% Chardonnay at Avize, Cramant, Mesnil-sur-Oger and Trépail. This Champagne Brut is made exclusively from the 2012 harvest, a vintage recognized as an exceptional year thanks to optimal weather conditions during budding and flowering, followed by harvesting on sunny, mild days, after exceptional ripening of the berries. After a highly selective sorting in the press, the wines were fermented and bottled, then transferred to the cellar on laths to age for at least 10 years, sheltered from the light and at an almost constant temperature. La robe is deep gold with a few golden highlights. The palate is generous and intense with notes of candied fruit, apricots Secs and almonds, before evolving into hints of sweet spices and acacia honey. The nose reveals perfect harmony between Pinot Noir and Chardonnay, with hints of red berries and white spring flowers such as hawthorn, lime blossom and acacia flower. This Champagne should be served at around 10 to 12°C, but no lower, so as not to break the wonderful aromas and taste sensations. For this reason, it should be left in the flute for a few minutes before tasting, to give it time to express its olfactory and gustatory richness. Ideal with veal walnuts with hazelnut oil and candied citrus fruits, asparagus with mousseline sauce, roast lobster with black Périgord truffles or steamed turbot with oyster mushrooms. Bottles should be stored in a cellar away from light and noise, with a humidity level of around 70%. We suggest successive tastings to measure its olfactory and gustatory evolution until it reaches its peak of quality.
